- cooked tofu pups sliced lengthwise
- ketchup and mustard
- wrap

Eggplant fajitas

- raw brown rice
- raw black beans
- chipotle salsa
- peppers
- onions
- eggplant
- avocado
- whole wheat tortilla
The longest part of this is the preparation, if you are planning to use raw ingredients give yourself an extra 30 mins to soak the beans and another 30 to simmer the beans and rice. While its still liquidy, mix some tomato paste, salt, and a teaspoon of oil in with the rice. This gives it a spanish flair. Sauté your veggies, pile it on to your tortilla, enjoy

Pear Crepes and veggie sausage

crepes are made with:
- 1 and 1/2 cup flour
- 1/2 teaspoon baking powder
- 2 cups almond milk
- 1/2 tsp salt
- 1/2 tsp vanilla
- 1/2 cup light beer
- 2 tbs sugar

Keep pan on medium heat, coconut oil, spread batter thinly on pan, allow to cook for 3-5 mins, flip

Chocolate sauce:
- vegan semi sweet chocolate chips
- 1/2 cup almond milk

Assembly:
Load each crepe with chopped pears and almonds, drizzle chocolate, top with more almonds

The sausages are “gimme lean” cooked in coconut oil

- lentils (boiled to hell make em mushy)
- garbanzo beans
- cubed tofu
- cauliflower
- packet chili
- salt to taste
- lemon juice

Boil until reduced. This is dank guys. I honestly didn’t expect it to turn out as well as it did but it tastes just like those flavored chili and lemon chips

I got my hands on some authentic green chile from Mary and Tito’s cafe and made this tofu spinach creation. Spicy as hell and just as delicious.

Power balls

- equal parts raw shredded coconut and powdered almonds ( in the food processor is fine)
- maple syrup (little bit)
- vanilla
- 1 scoop protein powder
- enough almond milk to make it moisten into a dough

Roll them up into balls then bake at 300 for 10 mins just enough to get them to hold their shape. I took a raw macaroon recipe and modified it a bit for these. I’m going to a convention tomorrow and I know there won’t be anything for me to eat there so I made myself something for energy. Try my balls. They’re good. My power balls I mean. Don’t make this weird.

"Beyond Meat" review
Saw this at whole foods today and I decided to try it out. I will probably buy it again but I wasn’t very impressed. For the price (5.99 at my whole foods) I thought it would be a little better. First off, it does not taste like chicken. It has an uncanny similarity to the flavor of beef jerky actually, dunno if that’s a good thing. I like the taste but again, doesn’t taste like chicken. For the texture, it’s a bit dry and doesn’t go down very easily. I think maybe cutting it into smaller pieces next time would help with that. Anyway if you crave chicken I would recommend either soy nuggets or boca chicken patties those are closer to chicken flavor and better texture.

Imitation fish from the Asian market with side of spinach. This is my new favorite way to prepare spinach: throw it in a pot with 2 tbs water, salt, garlic powder, and sesame seeds. Cook for about 1 minute until wilted. Delicious way to get your iron
